One of the things I like best about my job is testing the dinner menu for our Annual Dinner Dance. And why not, when you are working with the likes of the Hilton Warsaw culinary staff? For a few hours on Friday afternoon, Virginia and I had the distinct pleasure of joining Hilton General Manager Remco Norden and his lovely wife Jenny for an enchanting excursion into the gastronomic world of Hilton’s Executive Chef Sven Thomsen to savor this year’s dinner dance menu rendition.
Scrumptious was the word that came to my mind, while my dinner partners seemed to fluctuate between words like mouthwatering, tasty, delicious, exceptional, etc. The consensus, however was that this year’s entry surpasses all previous dinner dance renditions As Remco pointed out, “any hotel chef can create a masterpiece like this for 4 guests, but it takes the magical touch of a 5-star chef like Sven to duplicate his creation 600 times over when our dinner dance guests arrive one week from today.”
Now, it is my pleasure to present this year’s dinner dance menu:
FCSR MENU 2012
Low temperature cooked Norwegian Salmon filet
with green gazpacho and artichoke
Pink roasted Barbarie Duck breast with port wine jus, apple celery mash and grilled zucchini
Espresso crème brulee with raspberry shot and walnut ice cream
This will be an extremely busy week for our 40 PromiseKids and 10 chaperones as they make final preparations for the trip of their lifetimes to Warsaw to perform before the 600 guests attending our 8th Annual Dinner Dance, “What a Wonderful World.” This will be the first time most of our travelling party have ventured outside of their small villages in northwest Poland, and the excitement level has peaked out all over the PromiseLand.
The journey by bus from Swidwin to Warsaw takes between 8-10 hours under the best of conditions, and Virginia, Stefan, Natalie and I can’t wait to see the faces of our tired travellers as they enter the splendor of the Hilton Warsaw lobby next Sunday evening.

7:00 – departure from Swidwin
16:30 – arrival at the Warsaw Hilton Hotel, check-In
17:00 – 18:30 - Rehearsal with the Band 36.6.
19:00 – 20:00 – Dinner and bed time
13th February – Monday:
8:00 – breakfast
9:30 – 12:00 – Multikino – “The Muppets"
12:00/13:30 – lunch at KFC
14:30 – 16:30 - Dress Rehearsal, Hilton Grand Ballroom
18:00 – cocktails for dinner guests
19:00 – 8th Annual Dinner Dance
14th February – Tuesday:
9:00 – breakfast and check-out
10:00 - leave for PromiseLand
21:00 – arrive Swidwin
